Details: SUMATRA Mandheling high grown beans are considered the regions finest. They are a staple of coffee shops across the country as single origin offerings and are also used extensively in blends. Indonesian beans tend to handle heat very well making them a popular choice for darker roasts. Processing method is semi washed Giling Basah (wet hulled). Typical of green Indonesian coffee these Sumatra beans are a very deep rich dark mottled green in color. Plant varietals are Jember, Ateng, Bourbon. This coffee is Certified FairTrade from farms with an average of altitude 1,200-1,300M. and is Indonesian Grade 1. This particular lot of Sumatra beans has a brighter than usual cup (for Indonesia). With cupping notes of plum, wine, strawberry, orange, and it is sweet and smooth. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
